Spring Asparagus Pastry Parcels Recipe
Ingredients
- 1 sheet vegan puff pastry, thawed
- 12 fresh asparagus spears, trimmed
- 1/2 cup vegan cream cheese (or your preferred)
- 1 garlic clove, minced
- 1 tbsp fresh chives, chopped
- 1 tbsp fresh parsley, chopped
- 1/2 tsp lemon zest
- 1 tbsp olive oil
- 1/2 tsp sea salt
- 1/4 tsp black pepper
- 1 tbsp plant-based milk (for brushing) (or your preferred)
- 1 tsp sesame seeds (optional, for topping)
Instructions
- Preheat & Prep – Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Make the Garlic & Herb Spread – In a bowl, mix the vegan cream cheese, minced garlic, chives, parsley, lemon zest, salt, and pepper until smooth.
- Cut & Fill – Roll out the puff pastry sheet and cut it into 6 squares. Spread a spoonful of the garlic-herb mixture onto the center of each square.
- Assemble the Parcels – Place two asparagus spears diagonally across each pastry square. Fold two opposite corners of the pastry over the asparagus and press gently to seal.
- Brush & Sprinkle – Lightly brush the tops with plant-based milk and sprinkle with sesame seeds if using.
- Bake – Transfer to the baking sheet and bake for 18-22 minutes, or until golden brown and crispy.
- Serve & Enjoy – Let cool slightly before serving. Enjoy warm as an appetizer, brunch dish, or light lunch!
