For the Peach Filling:
- 6 ripe peaches, peeled and sliced
- 1/4 cup maple syrup or agave nectar
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- A pinch of salt
For the Crisp Topping:
- 1 cup rolled oats
- 1/2 cup almond flour or whole wheat flour
- 1/2 cup coconut sugar or brown sugar
- 1/4 cup coconut oil, melted
- 1/4 teaspoon ground cinnamon
- A pinch of salt
Instructions
1. Preheat Your Oven:
Preheat your oven to 350°F (175°C).
2. Prepare the Peach Filling:
In a large bowl, combine the sliced peaches, maple syrup, lemon juice, cornstarch, vanilla extract, cinnamon, and a pinch of salt. Toss until the peaches are well coated and the mixture is slightly thickened.
3. Make the Crisp Topping:
In a separate bowl, mix together the rolled oats, almond flour, coconut sugar, melted coconut oil, cinnamon, and a pinch of salt. Stir until the mixture is crumbly and well combined.
4. Assemble the Crisp:
Transfer the peach mixture into a 9-inch baking dish. Evenly spread the crisp topping over the peaches, covering them completely.
5. Bake:
Bake in the preheated oven for 35-40 minutes, or until the topping is golden brown and the peaches are bubbly.
6. Cool and Serve:
Allow the crisp to cool for at least 10 minutes before serving. This will help the filling set slightly. Serve warm on its own or with a scoop of vanilla ice cream for an extra treat.
