Golden Crispy Potato Fritters

If you're looking for a crispy, golden, and flavor-packed snack, these Easy Potato Fritters are just what you need! Perfectly crisp on the outside and soft on the inside, these fritters make an easy appetizer, side dish, or satisfying snack.

They come together in just 25 minutes and are made with simple pantry ingredients. Play around with dips and servings to change up to flavors - they're so versatile!

Crispy Potato Fritters Recipe

Ingredients:

  • 6 - 7 medium potatoes, boiled and peeled (about 2 pounds)
  • 1 cup feta alternative
  • ¼ cup cornmeal (plus 2 tbsp for rolling)
  • 4 tbsp flour
  • 2 tbsp unsweetened plant milk
  • 3 tsp oregano
  • 1 ½ tsp smoked paprika
  • 2 tbsp chopped fresh parsley or green onions (optional)
  • Salt and pepper to taste
  • Vegetable oil, for frying

Method:

1. Prepare the Potatoes
Mash or grate the boiled potatoes into a large bowl.

2. Mix the Fritter Batter
Add cheese alternative, cornmeal, flour, plant milk, spices, and salt to the mashed potatoes. Mix until well combined.

3. Shape the Fritters
Scoop out portions of the mixture and roll them into tennis-ball-sized rounds. Flatten slightly into patties.

4. Coat for Crispiness
Place cornmeal in a shallow dish. Lightly coat each fritter in the cornmeal to help create a crispy exterior.

5. Fry the Fritters
Heat ¼ inch of vegetable oil in a skillet over medium heat. Once the oil is hot, fry the fritters in batches for 3-4 minutes per side or until crispy and golden brown. Avoid overcrowding the pan.

6. Drain & Serve
Remove from the skillet and place on a paper towel-lined plate to absorb excess oil. Serve immediately with your favorite dip!
