Comforting Creamy Potato Soup

As the weather starts to cool down, there's nothing quite like a warm bowl of potato soup to bring comfort and coziness to your day.
This creamy potato soup is simple, hearty, and full of flavor—perfect for a comforting meal on a chilly evening. It’s easy to make and pairs wonderfully with a variety of toppings and sides that elevate it to a complete meal.
Creamy Potato Soup Recipe
Ingredients:
- 2 tablespoons olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 large russet potatoes, peeled and diced
- 4 cups vegetable broth
- 1 cup unsweetened plant-based milk (almond, oat, or soy work well)
- 1 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- Salt and pepper to taste
- 1/4 cup nutritional yeast (optional, for a cheesy flavor)
- 1 tablespoon lemon juice (optional, for brightness)
Instructions:
- Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing until the onion is translucent and fragrant, about 5 minutes.
- Cook the Potatoes: Add the diced potatoes to the pot and stir to coat them in the oil and onion mixture. Cook for a few minutes, then add the vegetable broth, thyme, rosemary, salt, and pepper. Bring the mixture to a boil, then reduce the heat and simmer for 15-20 minutes, or until the potatoes are tender.
- Blend to Perfection: Once the potatoes are soft, use an immersion blender to blend the soup until smooth and creamy. If you prefer a chunkier texture, you can blend only half of the soup. Alternatively, carefully transfer the soup to a blender in batches, then return it to the pot.
- Add Creaminess: Stir in the plant-based milk and nutritional yeast (if using) to the blended soup. Let it simmer for a few more minutes to allow the flavors to meld. Adjust the seasoning with salt, pepper, and lemon juice, if desired.
- Serve and Enjoy: Ladle the soup into bowls and top with your favorite garnishes (see suggestions below). Serve hot with a side of crusty bread or a simple salad.

Delicious Toppings
Toppings add both flavor and texture, making your bowl of soup even more satisfying. Here are a few I love to play around with:
- Crispy Chickpea Croutons
- Ingredients: 1 can chickpeas (drained and rinsed), 1 tablespoon olive oil, 1 teaspoon smoked paprika, 1/2 teaspoon garlic powder, salt and pepper to taste.
- Instructions: Preheat your oven to 400°F (200°C). Toss the chickpeas with olive oil and spices. Spread them out on a baking sheet and roast for 20-25 minutes, shaking the pan halfway through, until they are crispy and golden. Sprinkle over the soup just before serving.
- Herbed Garlic Croutons
- Ingredients: 2 cups bread cubes (use your favorite type of bread), 2 tablespoons olive oil, 2 cloves garlic (minced), 1 teaspoon dried oregano, 1 teaspoon dried basil, salt to taste.
- Instructions: Heat the olive oil in a pan over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant. Add the bread cubes and toss to coat. Sprinkle with dried herbs and salt, then toast in the pan for 5-7 minutes, stirring frequently, until the croutons are crispy and golden. I also like to add some pieces of facon, lightly crisped in a pan to add a touch of smoke!
- Chopped Fresh Herbs
- A sprinkle of fresh chives, parsley, rosemary or dill adds a burst of freshness to each bowl. Simply chop the herbs finely and sprinkle them over the soup just before serving.
- Vegan Sour Cream
- A dollop of vegan sour cream adds a tangy creaminess to the soup. You can buy it at the store or make your own at home with cashews, lemon juice, and a bit of apple cider vinegar. Usually I'll take this further with a sprinkle of grated cheese and spring onions!
Perfect Sides for Your Soup
Pair this creamy potato soup with these easy sides:
1.Garlic Herb Breadsticks
- Ingredients: 1 cup all-purpose flour, 1 teaspoon baking powder, 1/4 teaspoon salt, 1/2 cup water, 2 tablespoons olive oil, 2 cloves garlic (minced), 1 tablespoon dried Italian herbs.
- Instructions: Preheat your oven to 375°F (190°C). In a bowl, mix the flour, baking powder, and salt. Add the water and 1 tablespoon of olive oil, mixing until a dough forms. Divide the dough into strips and twist each one into a breadstick shape. Place on a baking sheet and brush with the remaining olive oil. Sprinkle with minced garlic and herbs, then bake for 12-15 minutes, or until golden.

2. Simple Mixed Green Salad
- Ingredients: Mixed greens (such as spinach, arugula, and romaine), cherry tomatoes, cucumber slices, red onion, your favorite vinaigrette.
- Instructions: In a large bowl, toss the mixed greens with cherry tomatoes, cucumber slices, and red onion. Drizzle with vinaigrette just before serving.
3. Roasted Vegetables
- Ingredients: 2 cups of your favorite vegetables (carrots, Brussels sprouts, sweet potatoes, etc.), 2 tablespoons olive oil, salt, pepper, and any herbs or spices you like.
- Instructions: Preheat your oven to 425°F (220°C). Toss the vegetables with olive oil, salt, pepper, and herbs/spices. Spread them out on a baking sheet and roast for 25-30 minutes, until tender and caramelized.
Serve it with your favorite breadsticks, a fresh salad, or a side of roasted vegetables, and you’ve got a dinner that’s both nourishing and satisfying.
