Flaky Spinach Pastry Wheels Recipe

Ingredients:

  • 1 sheet puff pastry, thawed
  • 1 ½ cups fresh spinach, finely chopped
  • ½ cup dairy-free ricotta or cream cheese alternative
  • ¼ cup nutritional yeast (for a cheesy flavor)
  • 1 clove garlic, minced
  • ½ tsp onion powder
  • ½ tsp dried oregano
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp olive oil
  • 1 tbsp unsweetened plant milk (for brushing)
  • Optional: Sesame seeds or everything bagel seasoning for topping

Method:

1. Preheat & Prep
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

2. Make the Filling
In a skillet over medium heat, sauté garlic in olive oil for 1 minute until fragrant. Add chopped spinach and cook for 2-3 minutes until wilted. Remove from heat and let cool.

In a bowl, mix the spinach, dairy-free ricotta, nutritional yeast, onion powder, oregano, salt, and pepper until well combined.

3. Roll & Spread
Unroll the puff pastry sheet on a lightly floured surface. Spread the spinach mixture evenly over the pastry, leaving a small border around the edges.

4. Roll & Slice
Roll the pastry into a tight log, starting from the long side. Use a sharp knife to slice into 1-inch wheels.

5. Bake
Place the wheels on the prepared baking sheet, brush with plant milk, and sprinkle with sesame seeds or everything bagel seasoning.

Bake for 18-20 minutes until golden brown and crisp.

6. Serve & Enjoy
Let cool for a few minutes, then serve warm with your favorite dipping sauce or alongside your Easter brunch spread!

How to Make Ahead & Store

Make Ahead: Prepare the rolls, wrap them tightly in plastic wrap, and refrigerate overnight. Slice and bake fresh the next day!
Freeze: Freeze unbaked wheels in an airtight container for up to 2 months. Bake straight from frozen, adding a few extra minutes to the baking time.
Store Leftovers: Keep leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven for crispiness!
