This vegan deviled eggs recipe will be a hit with both vegans and non-vegans alike! They use tofu as the base (but we’ve got a secret to making that eggy!) and make wonderful appetizers or party finger foods and are actually incredibly easy to make!

The egg shape relies on using a mold so I'd recommend grabbing one online as it's an interesting shape to find. Alternatively, you can use any cupcake or chocolate molds you already have, they'll just look a little less egg-like!

Vegan Deviled Eggs - How We Make Them Work

When creating a scrumptious platter of vegan deviled eggs, nailing the texture and flavor is key. Traditional egg-based recipes have got nothing on this vegan version. Here's a quick rundown of the essential ingredients you'll need:

Vegan Egg Base:

I'm going to share how you can create the egg white yourself but you could also make the recipe even more simple with a ready-made egg replacer:

  • For a close replica of hard-boiled eggs, WunderEggs are a standout option. Made from almonds, cashews, coconut milk, and agar, they replicate both the appearance and taste of traditional eggs while being free of seven major allergens.
  • Just Egg is another great option, primarily made from mung beans. Its blend with soy, canola oil, carrots, and turmeric not only replicates the look of eggs but also provides a versatile base for various recipes. This one will look a little more yellow so you won't achieve the white egg look.

The homemade base in this recipe uses plant milk and agar powder to help it set into the perfect "boiled egg" texture with a sprinkle of black salt to give it the authentic eggy taste (and smell!).

Black salt is a key ingredient. It's also known as Kala Namak and is naturally sulphuric, making it perfect for making any recipe a little eggy.

You'll need a mold to set your vegan egg white base. You can re-use these to make your own vegan easter eggs!

Deviled Egg Filling:

We're using turmeric to give it the classic yellow color, and again, we're mixing it with black salt!

We'll also use a touch of mustard and apple cider vinegar for a little tang and zest. 

Depending on your preference, you can choose vegan mayo or vegan yogurt for the filling.

So let's get started!

OUR VEGAN TOFU DEVILED EGG RECIPE

Vegan Egg White Base Ingredients:

  • 1 1/4 cups plant-based milk (unsweetened)
  • 1 1/2 cups firm silken tofu
  • 2 teaspoons agar-agar powder (or 1 tablespoon if using flakes)
  • 1/4 teaspoon black salt (kala namak)
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1 teaspoon olive oil (optional, for texture)

 

Creamy Vegan Egg Yolk Ingredients:

  • 1/2 cup canned chickpeas (drained and rinsed)
  • 2 tablespoons vegan mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon apple cider vinegar or lemon juice
  • 1/2 teaspoon turmeric (for color)
  • 1/4 teaspoon black salt (kala namak)
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon ground cumin
  • 1 tablespoon nutritional yeast
  • 1 tablespoon pickle juice or aquafaba (optional for thinning)
     

For Garnish: 

  • Smoked paprika
  • Fresh chives or dill (finely chop
  • Crispy onions

Instructions

Step 1: Creating The Vegan Egg White Base

1. In a small saucepan, combine plant-based milk and agar-agar powder. Whisk well and bring to a boil, then reduce heat to simmer for 2-3 minutes until the agar dissolves completely.

2. In a blender, combine silken tofu, black salt, garlic powder, onion powder, and olive oil (if using). Blend until smooth.

3. Slowly add the warm agar mixture to the blender and blend again until fully incorporated.

4. Pour the mixture into oval silicone molds or egg-shaped molds. Fill each mold halfway to mimic the thickness of an egg white.

5. Chill in the fridge for 1-2 hours until fully set.

Tips:

  • Gently tap the mixture after stirring to reduce air bubbles.
  • Try tapping the mold on the counter to ensure a smooth finish.

Step 2: Make the Creamy ‘Yolk’ Filling

1. Add the chickpeas, vegan mayonnaise, Dijon mustard, apple cider vinegar, turmeric, black salt, smoked paprika, ground cumin, and nutritional yeast to a food processor or blender.

2. Blend until smooth, adding pickle juice or aquafaba as needed to achieve a creamy consistency.

3. Taste and adjust seasoning as needed


Step 3: Assemble the Deviled Tofu Eggs

1. Once the ‘egg whites’ are set, carefully remove them from the molds. Use a small spoon or melon baller to create a shallow indentation in the center of each egg base.

2. Pipe or spoon the creamy yolk filling into the indentations.

3. Sprinkle with smoked paprika and garnish with chopped chives or dill.

4. For an extra crisp, sprinkle some crispy onions on top!

And that's it! They look impressive but are seriously easy to prepare and you can make plenty ahead of time!
