Method:
1. Activate the Yeast
In a bowl, whisk together the warm water, yeast, and brown sugar. Let it sit for 5-10 minutes until foamy.
2. Make the Dough
Add salt and olive oil, then gradually mix in flour, one cup at a time, until a soft dough forms. Knead for 5 minutes until smooth. Cover and let rest for 30-40 minutes, until doubled in size.
3. Shape the Bunny Pretzels
Divide dough into small sections. Roll each section into a rope and shape into a bunny head with ears (loop one end into an oval for the head, twist the other end into two “ears”).
4. Boil the Pretzels
Bring 8 cups of water to a boil. Stir in baking soda. Carefully dip each bunny pretzel in the water for 15-20 seconds, then remove and place on a lined baking sheet.
5. Brush & Bake
Brush each pretzel with plant milk and sprinkle with coarse salt or seasoning. Bake at 400°F (200°C) for 12-15 minutes, until golden brown.
Don't worry if you struggle with the twisting, as long as you somewhat achieve the twisted round centre and leave two longer pieces for the ears, they'll look perfect once cooked!
