The Creamiest Spinach Artichoke Dip

When it comes to easy, comforting appetizers, nothing beats a warm, creamy Spinach Artichoke Dip. This slow cooker version makes it even easier - just toss in the ingredients, set it, and let the magic happen! But don't worry, you can still make this without a slow cooker...

Perfect for Easter, game nights, brunch, or cozy evenings in, this dip is just as indulgent as the classic but made with simple, wholesome ingredients. Serve it with crackers, toasted bread, or fresh veggies.

Slow Cooker Spinach Artichoke Dip Recipe

Ingredients:

  • 1 cup raw cashews (soaked for 2+ hours or boiled for 10 minutes)
  • ¾ cup unsweetened plant milk (almond, oat, or cashew work best)
  • 2 tbsp nutritional yeast (for a cheesy flavor)
  • 2 tbsp fresh lemon juice
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp smoked paprika (optional for depth)
  • ¼ tsp salt, or to taste
  • 8 oz fresh spinach, chopped
  • 1 can (14 oz) artichokes, drained & chopped
  • 2 tbsp arrowroot powder or cornstarch (for thickening)

Method:

1. Blend the Creamy Base

  • In a high-speed blender, combine soaked cashews, plant milk, nutritional yeast, lemon juice, olive oil, garlic powder, onion powder, paprika, and salt.
  • Blend until smooth and creamy. Taste and adjust seasoning as needed.

2. Load Up the Slow Cooker

  • Add chopped artichokes and fresh spinach to the slow cooker.
  • Stir in the blended cashew mixture.
  • Sprinkle in arrowroot powder or cornstarch and mix well to help thicken.

3. Set & Cook

  • Cover and cook on LOW for 2-2.5 hours.
  • Stir after 1 hour to ensure everything is well combined.

4. Serve & Enjoy!

  • Keep warm in the slow cooker or transfer to a serving dish.
  • Serve with crackers, toasted bread, or veggie sticks for dipping.
